I am enjoying participating in the challenge, and have come up with some new healthy recipes, that I have really loved.  This Shrimp and Charred Brussel Sprout Linguine in Creamy Walnut Sauce is one of my favorites, and would be perfect around the holidays.  It has great fall/winter flavors and comes across as decadent, but is really quite healthful. The recipe packs a good fiber punch between the whole grain linguine, brussel sprouts and walnuts.  Shrimp is a great lean protein, and the olive oil and walnuts are loaded with healthy fats.  Neufchatal cheese is used to provide creaminess, since a small amount of this reduced fat cream cheese goes a long way.

My daughter is not a fan of shrimp, but she did eat up the whole grain linguine and even some of the brussel sprouts… now that is a heck of an achievement, but overall I would say this recipe would have more appeal to adults and teens, rather than younger children.  I will certainly make it again, when I have some grown-ups around.

Shrimp and Charred Brussel Sprout Linguine in Creamy Walnut Sauce Recipe

Ingredients:

1/2 box of Barilla  Whole Grain Linguine

1/2 pound fresh brussel sprouts (quartered)

pinch of kosher/sea salt

2 tbs. olive oil

2 cloves of garlic (crushed/minced)

pinch of thyme

1/2 cup walnuts chopped

2 tbs low cholesterol buttery spread

1 lb, large raw shrimp (peeled/de-veined)

1 1/2 cups hot chicken stock

3 tbs. Neufchatal cheese

2 tbs low cholesterol buttery spread

2 tbs grated Parmesan cheese

pinch of pepper (white or black)

Directions:

  1. Put on a pot of water for the pasta.  Cook the linguine al dente.
  2. While waiting for pasta water to boil, pour olive oil in large saute pan, skillet or wok.  Put on med-high heat.
  3. Once the pan is hot drop the quartered brussel sprouts in.  Add salt.  Stir occasionally, so you get a light char rather than burning them.
  4. When brussel sprouts are nearly cooked through, add garlic, walnuts and thyme.  Continue cooking until sprouts are tender.
  5. Whisk neufchatal cheese  into hot stock.
  6. Add buttery spread, to the brussel sprouts.  Once melted drop in shrimp.  Saute quickly (don’t worry if shrimp are still a bit translucent).
  7. Add chicken stock mixture, linguine, pepper and Parmesan to pan.
  8. Stir gently until well mixed and sauce is just a little wetter than you want to serve it (will thicken a bit more, as it cools and continues to absorb).
  9. Serve with a sprinkle of  grated Parmesan.

Bialetti Moka Express Espresso Maker Review and Giveaway

Bialetti Moka ExpressLove espresso, and don’t want to spend a small fortune on one of those expensive boiler models?  This simple stove top espresso maker may be just the solution for you.  The Moka Espress is made in Italy, and is the same design commonly found in European households.

The Bialetti Moka Express espresso maker is available in a wide array of sizes.  There are 1, 3, 6, 9 and 12 cup models.  The 6 cup model featured here sells for just $29.95, quite reasonable compared with the counter top brew models, many of which produce lackluster espresso.  If you entertain a lot, the 9 or 12 cup model would be a good investment even if you have a high end counter top model.  They generally don’t brew more than 2 cups at a time, not good if you have several dinner guests who would like a cup.

I found this maker easy to use, and it is foreseeable that the aluminum body could  last a lifetime.  A Bialetti Moka Express espresso pot would make an excellent gift for the foodie or coffee fiend in your life.  Pair it with a bag of fine quality espresso and some demitasse cups for a truly outstanding gift.

Ninja Kitchen System: Review and Giveaway

ninja kitchen system 1200I received a Ninja Kitchen System about a month ago and have been using it regularly since it’s arrival.  This sturdy well-built appliance has a wide array of functions.  It is the 1200 model, which seems to essentially be pretty much the same as the 1100.  The system comes with both a  40 oz and a 72 oz pitcher.  Five tool shafts are included: 2 bladed shafts (one for each size pitcher), a whipping paddle (great for dessert preparation), dough paddle (good for cookies, cakes, etc.) and dough blade (pizza & breads).

This is not a fragile piece of equipment.  I really appreciate it’s sturdiness, after my last multi-use system (from a different company) had two  two essential pieces break, making it virtually useless.  It is also easy to use.  I don’t know about you, but if a kitchen appliance has more than about 3 pieces to put together for use, or are difficult to clean, I just won’t be bothered.  They become space wasting dust collectors.  The Ninja Kitchen System is no more complicated than a blender, and this thing chomped right through full size ice cubes without whining at all.

  • motor will not activate unless cap is properly attached

Marco Polo Pasta (Kid Friendly Whole Grain Recipe)

eating whole grain pastaI am participating in the challenge, and creating some new healthy recipes.  This Marco Polo Pasta Recipe was specifically created to appeal to my 4 year old daughter.  She loves it when I prepare pasta in an Asian style, and is a big fan of both bean sprouts and carrots.  In this dish, fiber is boosted through the use of Barilla Whole Grain Spaghetti, and sodium is kept in check with the use of Balsamic vinegar, rather than Oyster sauce and distilled vinegar.  The blend of Italian and Asian ingredients is the inspiration for the name. My daughter loved these noodles so much that her ABA therapist*, used them as a reinforcer for correct answers during her therapy session that afternoon.  The pasta seemed to improve her performance significantly.  Guess I better make these again soon :)

Marco Polo Pasta Recipe (using Barilla Whole Grain pasta)

Serves: 2-4
Ingredients
  • 1/2 box of Barilla Whole Grain Spaghetti or Linguine (parboiled, should be quite al dente)
  • 1 tsp canola or vegetable oil
  • 2 carrots ( julienned )
  • 1/2 a sweet onion (sliced)
  • 12 oz. bag of bean sprouts
  • 1 tsp sesame oil
  • 1/2 cup chicken stock
  • 1 1/2 tbs low sodium soy sauce
  • 1 tbs balsamic vinegar
  • 1 tbs. light brown sugar
Instructions
  1. Add canola/vegetable oil to non-stick skillet or wok, over med-high heat.
  2. Once the pan is hot add carrots and saute for about a minute, then add sweet onion saute for another minute.
  3. Add bean sprouts and sesame oil. Saute for about 2 minutes, until all vegetables are cooked but still a bit firm.
  4. While cooking whisk together stock, soy sauce, balsamic, and sugar in a bowl.
  5. Add the whole grain pasta to the pan with vegetables, and stir well.
  6. Pour the sauce into the pan, and saute, until most of the liquid is absorbed (this is why it is important to start with al dente pasta)
  7. Serve hot or cold.

Bialetti Aeternum Eco-Friendly Non-Stick Pan Review and Giveaway

Bialetti LogoI received a Bialetti Aeternum 10″ non-stick saute pan for review about a month ago. It has quickly become my go-to pan for making omelets.  The eco-friendly nonstick nano-ceramic interior surface, has performed outstandingly well.  Not only have my omelets slid smoothly out, but I have been able to brown meats, and caramelize vegetables successfully in this pan as well, and clean-up was a breeze.
bialetti aeternum cookware reviewAs someone who frequently photographs food preparation for blog posts, I also like that the interior surface is white.  My kitchen is poorly lit, and my dark colored and stainless pan are hard to photograph.  The white reflected the light, but not as harshly as stainless.  It also makes it a little easier to monitor how much your food is browning.
making an omelette in nanoceramic panBelow is a graphic showing the layers of the pan.  As you can see, there is a scratch resistant exterior.   The bulk of the pan is aluminum, providing great heat distribution, and the interior coating in nano-ceramic.  This coating can withstand temperatures up to 750°, anything higher than that would be insane to cook with anyway.  I have found it to be very scratch resistant, much more so than typical non-stick coatings.  The pan is also PFOA, PTFE and Cadmium -Free.

I have no problem whatsoever recommending Bialetti Aeternum cookware to my readers. My only complaint would be that they didn’t send me more pans… hint, hint…lol
