Giveaway : Kraft Fresh Take Recipes Make Dinner Easy

southwest three cheese chicken fresh takeWith busy schedules, even avid cooks have a hard time, presenting fresh healthy homemade food for their family at every meal.  This is where a product like the new Fresh Take line from Kraft comes in handy.  It sure simplifies the dinner making process and cuts down on mess to clean up.kraft fresh take southwest three cheese

I tried the Southwest Three Cheese recipe. It is for chicken, pork or fish.  As you can see above I went with chicken for this particular meal.  All you need to make this recipe is the Fresh Take package,  meat of choice, and basic salad fixin’s.  Pretty easy, and something your family members who are not too skilled in the kitchen could certainly prepare.

fresh take mixing bagThis is what is in the package when you open it up.  Complete directions are conveniently located right on the bag itself.  Even a teen, won’t miss that.

fresh take cheese and crumbsPreheat oven to 375 degrees. Open the package, pull apart the separating partition, and mix the topping together, then drop in chicken and coat.  Place on baking sheet and top with remaining cheesy crumb mixture.  Bake for 28-30 minutes (I used breasts, if you are using tenders, it will take considerably less time).  When done, put it on top of a salad and enjoy!

Kraft Fresh Take recipe packets are available in 6 varieties:

  • Southwest Three Cheese: A blend of garlic, cumin and red chili pepper combined with Colby, mozzarella and cheddar cheeses creates a zesty Tex-Mex meal with chicken, pork or fish.
  • Italian Parmesan: For a classic Italian meal, add this blend of parsley, garlic, onion, Parmesan and mozzarella to chicken, pork or fish.
  • Rosemary & Roasted Garlic: This blend of rosemary and garlic with mozzarella, provolone, Parmesan and Romano cheeses is a perfect seasoning for pork and adds delicious flavor to chicken and fish, too.
  • Cheddar Jack & Bacon: Savory herbs, bacon, Monterey Jack, cheddar and provolone cheeses pair perfectly with chicken, pork and fish.
  • Chili Lime & Panko: A mix of chili peppers and lime with Colby and Monterey Jack cheeses spice up fish and complement chicken and pork.
  • Savory Four Cheese: This blend of feta, mozzarella, provolone and Parmesan cheese crumbles with roasted garlic and onion will create a savory burger or classic meatloaf oozing with cheese.

My Thoughts: I personally enjoyed the Fresh Take Southwest Three Cheese recipe on my chicken very much.  The cheese and spices really made the breaded chicken special.  It had great flavor and crisped up nicely.  The chicken was moist and the topping had so much flavor that I didn’t need much dressing on the salad.

Giveaway: Rubbermaid 2-in-1 Recycler for Tidy Recycling

Like many owners of older homes, I have some major storage issues.  There is simply no spot under my cabinets to store recyclables.  I have been placing the large ugly bins in my backroom and bringing recyclable items back there, as they are used.  Not the most convenient set up, considering the already impractical design of the kitchen.

Rubbermaid 2 in 1 recyclerI was sent a Rubbermaid 2-in-1 Recycler for review a few weeks ago, and am quite pleased with the quality of construction and ease of use.  It certainly looks far better than the blue & green bins from the city, and the compact design makes it easy to find a spot for.

Convenient handles on both the top and bottom bins make transporting recyclables simple.  The bottom bin tilts out and holds a standard 8-gallon trash bag.  The bag is held in place by the  LinerLock™ bag system so it stays put without slipping.  The Rubbermaid 2-in-1 Recycler is also appropriately made with recycled materials, and is in torn recyclable itself.

I liked my recycler so much, I ended out buying a new Rubbermaid outdoor trash can, a few days after it arrived.  It has been very effective at keeping out the opossums that were raiding my trash.  I really should pick up another one.

Healthy Recipe: Shrimp and Charred Brussel Sprout Linguine in Creamy Walnut Sauce

shrimp brussel sprout walnut cream sauce pastaIt has become more and more evident that a diet rich in whole grains and healthy fats can make a significant difference in one’s overall health.  If you can make your family nutrient packed dishes, that satisfy both their taste buds and their tummy, they won’t give you the typical health/diet food complaints.

barilla taste and share challengeBarilla has launched a Taste & Share Challenge to encourage us to try cooking with their whole grain pasta, which supplies 3x the fiber of typical pasta.  There are many recipes to try, and by sharing the challenge with your friends via Facebook, they will get a coupon for $1 off their next box, and you will get a coupon for $1 off two boxes.

Barilla has made it even easier for Blommi readers to take the Whole Grain Taste & Share Challenge!  For a limited time, visit: http://on.fb.me/TryWholeGrain, enter box code 1129 and select two of your Facebook friends to share Whole Grain with. You’ll be instantly eligible to print a $1-for-2 coupon and your friends will each receive a $1-for-1 coupon good for any variety of Barilla Whole Grain pasta. (offer valid through 12-29)

I am enjoying participating in the challenge, and have come up with some new healthy recipes, that I have really loved.  This Shrimp and Charred Brussel Sprout Linguine in Creamy Walnut Sauce is one of my favorites, and would be perfect around the holidays.  It has great fall/winter flavors and comes across as decadent, but is really quite healthful. The recipe packs a good fiber punch between the whole grain linguine, brussel sprouts and walnuts.  Shrimp is a great lean protein, and the olive oil and walnuts are loaded with healthy fats.  Neufchatal cheese is used to provide creaminess, since a small amount of this reduced fat cream cheese goes a long way.

My daughter is not a fan of shrimp, but she did eat up the whole grain linguine and even some of the brussel sprouts… now that is a heck of an achievement, but overall I would say this recipe would have more appeal to adults and teens, rather than younger children.  I will certainly make it again, when I have some grown-ups around.

Shrimp and Charred Brussel Sprout Linguine in Creamy Walnut Sauce Recipe

Ingredients:

1/2 box of Barilla  Whole Grain Linguine

1/2 pound fresh brussel sprouts (quartered)

pinch of kosher/sea salt

2 tbs. olive oil

2 cloves of garlic (crushed/minced)

pinch of thyme

1/2 cup walnuts chopped

2 tbs low cholesterol buttery spread

1 lb, large raw shrimp (peeled/de-veined)

1 1/2 cups hot chicken stock

3 tbs. Neufchatal cheese

2 tbs low cholesterol buttery spread

2 tbs grated Parmesan cheese

pinch of pepper (white or black)

Directions:

  1. Put on a pot of water for the pasta.  Cook the linguine al dente.
  2. While waiting for pasta water to boil, pour olive oil in large saute pan, skillet or wok.  Put on med-high heat.
  3. Once the pan is hot drop the quartered brussel sprouts in.  Add salt.  Stir occasionally, so you get a light char rather than burning them.
  4. When brussel sprouts are nearly cooked through, add garlic, walnuts and thyme.  Continue cooking until sprouts are tender.
  5. Whisk neufchatal cheese  into hot stock.
  6. Add buttery spread, to the brussel sprouts.  Once melted drop in shrimp.  Saute quickly (don’t worry if shrimp are still a bit translucent).
  7. Add chicken stock mixture, linguine, pepper and Parmesan to pan.
  8. Stir gently until well mixed and sauce is just a little wetter than you want to serve it (will thicken a bit more, as it cools and continues to absorb).
  9. Serve with a sprinkle of  grated Parmesan.

Bialetti Moka Express Espresso Maker Review and Giveaway

Bialetti Moka ExpressLove espresso, and don’t want to spend a small fortune on one of those expensive boiler models?  This simple stove top espresso maker may be just the solution for you.  The Moka Espress is made in Italy, and is the same design commonly found in European households.

The Bialetti Moka Express espresso maker is available in a wide array of sizes.  There are 1, 3, 6, 9 and 12 cup models.  The 6 cup model featured here sells for just $29.95, quite reasonable compared with the counter top brew models, many of which produce lackluster espresso.  If you entertain a lot, the 9 or 12 cup model would be a good investment even if you have a high end counter top model.  They generally don’t brew more than 2 cups at a time, not good if you have several dinner guests who would like a cup.

I found this maker easy to use, and it is foreseeable that the aluminum body could  last a lifetime.  A Bialetti Moka Express espresso pot would make an excellent gift for the foodie or coffee fiend in your life.  Pair it with a bag of fine quality espresso and some demitasse cups for a truly outstanding gift.

Ninja Kitchen System: Review and Giveaway

ninja kitchen system 1200I received a Ninja Kitchen System about a month ago and have been using it regularly since it’s arrival.  This sturdy well-built appliance has a wide array of functions.  It is the 1200 model, which seems to essentially be pretty much the same as the 1100.  The system comes with both a  40 oz and a 72 oz pitcher.  Five tool shafts are included: 2 bladed shafts (one for each size pitcher), a whipping paddle (great for dessert preparation), dough paddle (good for cookies, cakes, etc.) and dough blade (pizza & breads).

This is not a fragile piece of equipment.  I really appreciate it’s sturdiness, after my last multi-use system (from a different company) had two  two essential pieces break, making it virtually useless.  It is also easy to use.  I don’t know about you, but if a kitchen appliance has more than about 3 pieces to put together for use, or are difficult to clean, I just won’t be bothered.  They become space wasting dust collectors.  The Ninja Kitchen System is no more complicated than a blender, and this thing chomped right through full size ice cubes without whining at all.

A few notable features:

  • BPA free
  • suction feet, with locking lever
  • 1100 watts of power
  • easy -twist lock in
  • motor will not activate unless cap is properly attached

The Ninja Kitchen System Retails for $159.99, and can be bought right off their website, as well as, from most major retailers.

Disclosure: Product sample was provided.  All experiences and opinions presented here are my own.

Marco Polo Pasta (Kid Friendly Whole Grain Recipe)

marco polo noodles recipeIf you have been wanting to add more whole grains into your family’s diet, but haven’t quite known where to start, now is the perfect time.  Barilla has launched a Taste & Share Challenge to encourage us to try cooking with their whole grain pasta, which supplies 3x the fiber of typical pasta.  There are many recipes to try, and by sharing the challenge with your friends via Facebook, they will get a coupon for $1 off their next box, and you will get a coupon for $1 off two boxes (my local grocer has Barilla pasta on sale for $1 this week, so these coupons make for a great deal).

taste and share challenge

eating whole grain pastaI am participating in the challenge, and creating some new healthy recipes.  This Marco Polo Pasta Recipe was specifically created to appeal to my 4 year old daughter.  She loves it when I prepare pasta in an Asian style, and is a big fan of both bean sprouts and carrots.  In this dish, fiber is boosted through the use of Barilla Whole Grain Spaghetti, and sodium is kept in check with the use of Balsamic vinegar, rather than Oyster sauce and distilled vinegar.  The blend of Italian and Asian ingredients is the inspiration for the name. My daughter loved these noodles so much that her ABA therapist*, used them as a reinforcer for correct answers during her therapy session that afternoon.  The pasta seemed to improve her performance significantly.  Guess I better make these again soon :)

Bialetti Aeternum Eco-Friendly Non-Stick Pan Review and Giveaway

Bialetti LogoI received a Bialetti Aeternum 10″ non-stick saute pan for review about a month ago. It has quickly become my go-to pan for making omelets.  The eco-friendly nonstick nano-ceramic interior surface, has performed outstandingly well.  Not only have my omelets slid smoothly out, but I have been able to brown meats, and caramelize vegetables successfully in this pan as well, and clean-up was a breeze.
bialetti aeternum cookware reviewAs someone who frequently photographs food preparation for blog posts, I also like that the interior surface is white.  My kitchen is poorly lit, and my dark colored and stainless pan are hard to photograph.  The white reflected the light, but not as harshly as stainless.  It also makes it a little easier to monitor how much your food is browning.
making an omelette in nanoceramic panBelow is a graphic showing the layers of the pan.  As you can see, there is a scratch resistant exterior.   The bulk of the pan is aluminum, providing great heat distribution, and the interior coating in nano-ceramic.  This coating can withstand temperatures up to 750°, anything higher than that would be insane to cook with anyway.  I have found it to be very scratch resistant, much more so than typical non-stick coatings.  The pan is also PFOA, PTFE and Cadmium -Free.

nano ceramic coating

I have no problem whatsoever recommending Bialetti Aeternum cookware to my readers. My only complaint would be that they didn’t send me more pans… hint, hint…lol

The Aeternum is Italy’s number one selling nanoceramic nonstick cookware line. The highly advanced and easy to clean nanoceramic coating paired with the heavy-weight coined base provides excellent thermal properties and even heat distribution, so dishes are cooked to perfection every time. Users also love that it is eco-friendly– PFOA free, and its nonstick coating is applied at a low temperature, leading to a lower emission of C02 into the atmosphere. With pans available at $39.95 and under – they are a great value!
