Kid Veggies: Zucchini Boats with Carrot Fish #veggieworld

zucchini boat with carrot fishGetting kids to eat their veggies can be very challenging for many parents.  Over the past few months, I’ve been using far more vegetables in my cooking.  My daughter and I enjoy them anyway, so it isn’t a particularly difficult change for us, but I am one of the lucky ones.

Emphasizing vegetables, lean meats and  whole grains, in our diet, has already made a difference for me personally. I enjoy cheese, so I am extra watchful  about the types of fats I use in dishes.  By substituting a buttery spread such as Country Crock, which has  70% less saturated fat, zero trans fat and 30% fewer calories than butter.  I leave myself wiggle room to add a bit of my beloved cheese. I’ve dropped a few pounds since the change, and my recent annual check-up was all good news.  Helping my daughter learn to eat this way young, will make healthier eating choices easier for her as she grows up.

I recently  checked out the Clare Crespo Cookbook (free download available below), which is full of fun and novel ways to present veggies to your kids.  So often, people drown out the flavor of vegetables, with over seasoning and over cooking.  In the cookbook Clare puts the emphasis on enjoying the real taste of fresh vegetables, accenting them with Country Crock.  I tried the Zucchini Boats recipe from the cookbook, as you can see in the pictures, I made mine into a schooner and added some silly fish.  The only change I made to Clare’s orginal recipe was swapping out chopped American cheese, for the Feta that my my preschooler won’t eat.  A fleet of these veggie boats would be perfect to serve at a kid’s pool party, don’t you think?

Serves: 4
Ingredients
  • 2 medium zucchinis
  • 1 large carrot, peeled
  • 2 Tbsp. Country Crock® Spread
  • 1/2 small onion, diced
  • 1 clove garlic, fi nely chopped
  • 1 cup cooked couscous
  • 1/4 cup reduced fat feta cheese
  • 1 Tbsp. fresh parsley, oregano or
  • mint, fi nely chopped
  • 1/8 tsp. salt
  • 1/8 tsp. ground black pepper
Instructions
  1. Preheat oven to 350°.
  2. Bring a large pot of water to boil.
  3. Cut zucchinis in half lengthwise. Cut 2-1/2 inches off bottom of carrot and cut in half lengthwise, then cut each half on the diagonal.
  4. Boil zucchini and carrot “sails’’ for 5 minutes. Remove and let cool until you can handle them. With a small knife or pointed spoon, scoop center of zucchini out (leaving 1/2 -
  5. inch thickness to zucchini “boat”).
  6. Dice scooped out zucchini and remaining end of carrot.
  7. Heat Country Crock® Spread in skillet. Add onion and garlic, cook until onion is soft, stirring occasionally, about 5 minutes.
  8. Add carrots and zucchini and cook for about 7 minutes, stirring occasionally.
  9. Remove from heat and add to cooked couscous. Stir in feta cheese, herbs, salt and pepper.
  10. Place zucchini halves on baking sheet. Scoop couscous mixtures into zucchini halves, pressing firmly to form mounds.
  11. Bake 25 minutes.
  12. Remove from oven. Carefully place carrot ends on small skewers or toothpicks and stick sails in boats.

Baking Fries in the Oven

baking fries in the ovenBaking fries in the oven is both easy and lower in fat.  Oven fries can be baked simply with oil and seasoning or a seasoned coating, either way, oven baked fries will be considerably lower in fat than the deep fried  version.  I have included instructions for both ways of baking them.

Either style of  baked fries is made by cutting potatoes into wedges or steak fry size, and baking at 425° once coated.

  • For a traditional fry: Simply mix the potatoes in a large bowl with olive or canola oil, herbs and seasonings can either be added right to the oil before mixing, or can be sprinkled along with some sea/Kosher salt on them, when they are placed on a baking sheet.  The potatoes will then go in a preheated 425° oven, until cooked through (about 25 minutes).
  • For a seasoned coated fry (shown above):  Dredge the cut potatoes in a mixture of-  1/4 c.  flour, 1/8 c. bread crumbs, 1 tsp. Mrs. Dash (or other seasoning), salt & pepper. Put a tbs. of oil spread out onto baking sheet, place potatoes on sheet and spray tops with non-stick cooking spray.  Bake for approx. 25 minutes at 425°, or until soft in centers.

Marco Polo Pasta (Kid Friendly Whole Grain Recipe)

eating whole grain pastaI am participating in the challenge, and creating some new healthy recipes.  This Marco Polo Pasta Recipe was specifically created to appeal to my 4 year old daughter.  She loves it when I prepare pasta in an Asian style, and is a big fan of both bean sprouts and carrots.  In this dish, fiber is boosted through the use of Barilla Whole Grain Spaghetti, and sodium is kept in check with the use of Balsamic vinegar, rather than Oyster sauce and distilled vinegar.  The blend of Italian and Asian ingredients is the inspiration for the name. My daughter loved these noodles so much that her ABA therapist*, used them as a reinforcer for correct answers during her therapy session that afternoon.  The pasta seemed to improve her performance significantly.  Guess I better make these again soon :)

Marco Polo Pasta Recipe (using Barilla Whole Grain pasta)

Serves: 2-4
Ingredients
  • 1/2 box of Barilla Whole Grain Spaghetti or Linguine (parboiled, should be quite al dente)
  • 1 tsp canola or vegetable oil
  • 2 carrots ( julienned )
  • 1/2 a sweet onion (sliced)
  • 12 oz. bag of bean sprouts
  • 1 tsp sesame oil
  • 1/2 cup chicken stock
  • 1 1/2 tbs low sodium soy sauce
  • 1 tbs balsamic vinegar
  • 1 tbs. light brown sugar
Instructions
  1. Add canola/vegetable oil to non-stick skillet or wok, over med-high heat.
  2. Once the pan is hot add carrots and saute for about a minute, then add sweet onion saute for another minute.
  3. Add bean sprouts and sesame oil. Saute for about 2 minutes, until all vegetables are cooked but still a bit firm.
  4. While cooking whisk together stock, soy sauce, balsamic, and sugar in a bowl.
  5. Add the whole grain pasta to the pan with vegetables, and stir well.
  6. Pour the sauce into the pan, and saute, until most of the liquid is absorbed (this is why it is important to start with al dente pasta)
  7. Serve hot or cold.

Creamy Dreamy Cantaloupe Orange Freezer Pops Recipe

creamy cantaloupe orange freezer pops recipeI was trying some Coffee-mate Natural Bliss this morning in preparation for a review.  It quickly occurred to me that this stuff would go just as well (if not even better)  with fruit.  I raided the fridge of cantaloupe, and this recipe is what I came up with.

Creamy Cantaloupe Pops Recipe

1 cup diced fresh cantaloupe

1/4 cup Coffee-Mate Natural Bliss Sweet Cream Flavor

1/4 orange juice

Directions:

  1. Add all ingredients to blender.
  2. Pulse until cantaloupe is completely pureed.
  3. Pour into freezer pop molds.
  4. Freeze for a  minimum of 6 hours.  These will take a little longer than plain juice pops, due to the density of the mixture.

Creamy Chicken Veggie Pasta Recipe

Ingredients:

1 cup chicken broth

1/2 cup low fat milk

4-5 baby carrots (julienned)

1 cup pasta (small fusilli or elbows)

1/2 cup frozen french cut green beans

Directions:

  1. Put all ingredients (except green beans) in sauce pan on high heat.
  2. Stir frequently, when it comes to a boil, add green beans.
  3. Keep stirring, and cook uncovered, until most of the liquid has absorbed or evaporated.
  4. Take off heat.
  5. Serve with Tyson 100% All Natural Chicken Nuggets.

Colorful Breakfasts for Fussy Kids

My daughter is fussy.  She loves many foods, but there are many others she snubs.  I do my best to provide a balanced diet for her, through giving as much variety among the things she does like on a plate.  With M it isn’t too hard because she adores fruit of all kinds.

I always give her Gummy Multi-vitamins & DHA Gummies with breakfast each morning.  There are actually 4 different fruits on the plate (above), if you count the blueberries in the waffle.  A cup of 2% milk was served along side this plate for protein.

toddler breakfast - lunchThis one isn’t quite as visually exciting.  Just Granny Smith apples, red seedless grapes, PB&J (for more nutrients use whole wheat bread) and Gummy vitamins.

In general, this is what M has for breakfast pretty much every morning.  The some mornings the starch will be a bagel, toast or multigrain cheerios.  The fruits vary day to day, but I try and give her at least two kinds.  The gummy vitamins are always served.  Just because a kid won’t eat eggs, breakfast meats or hot cereal doesn’t mean you don’t have a huge array of options to give them.  Even with the simple formula I use to assemble a fast breakfast for M each day,  her plates are always different.

An Afternoon at Panera Bread

When I picked my little girl up from preschool this afternoon,  I had a surprise up my sleeve.  Instead of going home for lunch, as we typically do,  she was my date for an afternoon meal at Panera Bread.  I love Panera in the off hours, of the mid afternoon.  There are still plenty of people their, but the bustle of the lunch rush is over.  It is such a warm and relaxing atmosphere, to enjoy their fresh food in.

This was the first time, I have ever brought my little girl there to eat.  She is exceedingly fussy, but the kids meal options at Panera include  some of her favorite foods, so no worries there.  I ordered her the kid’s grilled cheese (which comes with a squeeze yogurt).  I have been on a diet,  but wanted something hearty,  so I selected a soup and sandwich combination plate, for myself.   I also got us a mango smoothie and a bottled water to share, and a shortbread cookie for her dessert.

We settled into a cozy semi-circle bench table, which was perfect for dining with her.  By the time we had gotten our coats off, our coaster was already buzzing.  Quick service is something your really appreciate, when dining with a 3 year old.  M dove right into her plate, while happily people watching the rest of the guests.

lunch at Panera BreadWhile she was occupied with munching away,  I was able to relax and enjoy my own lunch, warm and delicious creamy tomato soup and a fresh smoked turkey sandwich, with lettuce tomato and spicy mustard.  Perfect for a cold New England day, and only around 500 calories.  It makes me happy to  be able to have a quality meal, not have to make it myself, and not blow my diet eating it.  Some great jazz and a lovely atmosphere are just icing on the cake.

Once M had finished a good portion of her meal, and had had a few slips of smoothie,  I gave her a piece of the shortbread cookie (the cookie is quite large).  As you can see she was a big fan :)

While I really enjoyed my choices today, next time I go I think I will try their new Thai Chopped Chicken Salad.  The lady at the table across from us had one, and it certainly looked good.  She made short work of it, so I am guessing it is as good as it looks.

Food Should Taste Good: Review and Giveaway

Food Should Taste Good, makes many varieties of chips, all of which are cholesterol, trans fat and gluten free.  They are also, a good source of fiber, do not use genetically modified ingredients, are certified Kosher, and have less sodium than most chips on the market. 

olive food should taste goodI had seen the bags of these snacks on the shelves many times before, and while the packaging looked attractive, I was leery.  I had tried many different “healthy” chips in the past, and was mostly disappointed.  Most didn’t taste any better than chewing on Styrofoam or hay (not that I make a habit of chewing either).  When I was contacted to try the line of chips for review, I figured…why not it’s your dime.

I now know, what I was missing.  These chips ROCK!  Putting aside the healthy aspect of these chips, they just plain taste damn good.  My fussy daughter has scarfed down as many as she can get her little mitts on.  I was very pleasantly surprised by the luxurious flavor of the Olive chips.  They are crunchy, but still give you the buttery effect of eating real olives.  All the flavors we tried were good, but Olive, The Works & Multigrain were our favorites.

If you are like I was, and have been hesitating to try these, just do it.  I doubt you will be disappointed.  Stop by the Food Should Taste Good website for a $1 off coupon.
