Cook Dinner from Scratch…No Excuses! #HelloFresh

hello fresh salmon meal

I am often known to espouse the virtues of cooking from scratch, but I do realize that is easier said than done for many. I work from home, and cooking is a big part of that work, so I must admit it is easier for me. I still find grocery shopping a massive time suck though, especially if you are planning meals from fresh ingredients. If you’ve been box or take-out dependent, and are not used to preparing fresh home cooked meals, the process of switching can seem daunting I’m sure. Sorry, but I’m about to strip away your excuses.

Organic Valley ~ Eggnog Whipped Cream Recipe

eggnog whipped cream feature

I am sometimes guilty of throwing a few too many things into a recipe, but some ingredients call for more respect than that.  They deserve to stand less encumbered, and be showcased in their own right. I’ve found this to be the case with the organic dairy products I’ve tried from Organic Valley. Organic Valley [...]

Two Unholy Culinary Experiments I Committed on Turkey Leftovers this Week

culinary experiments

Now that I’ve got your attention :smirks sinisterly:, get the thoughts of Frankenstein & the Omen out of your head.  While My experiments in the kitchen this week would actually not qualify as unholy, they are surely deserving of the  unorthodox label. Hazelnut-Truffle Oil Quinoa (served with Maple Mustard Salmon)

Maple Mustard Salmon over Hazelnnut Quinoa

Hazelnut-Truffle Oil Quinoa is an easy recipe,  that teams the flavor of truffles with nuts from their favorite tree to grow under.  Yeah, I thought I was pretty clever with that one…lol. This vegan quinoa recipe is hearty enough to serve as an entree itself, but pairs nicely with grilled portabella, salmon (as shown here [...]

Seafood Puttanesca Recipe: A Reduced Sodium Version

seafood puttanesca reduced sodium

Seafood Puttanesca is not an uncommon dish on restaurant menus in my area.  Rhode Island is known for seafood, and we have a large Italian population in the state, so various spicy tomato based seafood dishes are quite popular.  While I enjoy the bold flavors of Puttanesca sauce, it can be a bit salty for [...]
