Yeah, I know curry isn’t quite Mediterranean, but I love to experiment with ingredients and it goes good in here. This pasta salad works as a light meal, as well as a side dish. I usually make this with red tomatoes, but I had a nice yellow one on hand today.
It goes well with BBQ meats, as well as, grilled fish like salmon or tuna.
Mediterranean Curried Pasta Salad
1/2 box of mini fusilli
1/4 small sweet onion diced
1 can garbanzo beans
1/2 can black olives ( broken up by hand)
1 small ripe tomato diced
1/2 c. light mayonaise
1/4 c. Italian dressing
1/8 c. pickle juice
1 tbs olive oil
1/2 tsp minced garlic
1/2 tsp. curry powder
1/2 tsp. Mrs. Dash (original)
1/4 tsp kosher salt (up to 1/2 tsp is fine)
1/4 tsp black pepper
- Put on water for pasta now, it will cook while the rest of the steps are going on.
- Put olive oil in skillet, on med-high heat.
- Saute the onions until they start to brown.
- Add garlic, curry and Mrs. dash, stir a few times ( this opens up spice flavors).
- Add olives and garbanzo beans, heat thoroughly, add salt and black pepper as you remove from heat. stir and set aside.
- Whisk together: mayonaise, dressing and pickle juice (use a large bowl).
- Stir in diced tomaotes.
- Drain and rinse (cold water) pasta once it is al dente.
- Stir the garbanzo bean mixure into the dressing mix.
- Make sure the pasta is very well drained and add it too.
- Stir until all ingredients are well coated.
- Chill to serve.

Yeah, I was just in Cyprus and had a mediterranean buffet every day and didn’t see this pasta…but it looks YUMMY!
I may have to try this out! I don’t think my hubby would like it but I’m sure the kiddos would (and me too!)
