    Sweet Potato Custard

1 cup mashed cooked sweet potato
    1/2 cup mashed banana
    1 cup evaporated skim milk
    2 Tbs packed brown sugar

    2 beaten egg yolks
    1/2 tsp salt
    Nonstick cooking spray, as needed
    1 Tbsp sugar
    1 tsp ground cinnamon

Get out a bowl and add the sweet potato and banana to it. Make sure both are well mashed. Add the milk and stir until combined. Add the brown sugar, egg yolks and the salt and mix well.

Add the mixture to a 1 quart casserole dish that has been sprayed with the cooking spray.

Combine the sugar and cinnamon in a small cup or bowl and sprinkle it over top of sweet potato mixture.

Bake at 325 for 45 minutes. Your custard is done when a knife or toothpick inserted in the middle comes out clean.

    My son always loved this.

    3 apples
    crushed graham crackers.

I boiled apples until tender then added to a blender with crushed graham crackers. Blend until pureed and crackers soften within a few minutes for easy swallowing.
