Kielbasa and Potatoes Recipe

  • 14-16 oz. kielbasa
  • 4-5 potatoes
  • 1 Vidalia onion
  • ½ tsp. paprika
  • ½ tsp minced garlic
  • ⅓ tsp. Kosher salt
  • ¼ tsp. oregano

Instructions
  1. Preheat skillet on med-high heat.
  2. Cut sausage into slices, and drop in the heated pan. Stir while frying.
  3. As kielbasa is browning, chop the onion and potatoes.
  4. Once the sausage has browned up a bit, and released most of the grease, scoop it out and put aside. Be careful to leave grease in pan.
  5. Drop potatoes into the kielbasa grease to fry. Once they start to brown cut down heat to med-low, and add the remaining ingredients. Stir well.
  6. Once the potatoes have softened, add the kielbasa back into the pan mix in and all to reheat before serving.

Notes
*A reader (on Pinterest) suggested microwaving the potatoes until nearly done, then cutting and frying with the kielbasa, to cut down on cooking time. Since, we all seem to be regularly in a time crunch, to feed our families, I wanted to add her suggestion. She said it worked out well. *Peppers are also a popular addition to many kielbasa and potato recipes. I usually serve a salad or cooked greens along with mine.

While my husband lived with us I made this easy recipe frequently, it was a favorite of his. Now I still make it occasionally, but use the lower fat chicken kielbasa sausage rather than the beef version he preferred.  I like serving it with sauteed broccoli rabe.

  8. Question. I know this sounds stupid when you add the remaining ingredients does the kielbasa get tossed in as well or get mixed in after. Thanks.

      Not a stupid question at all. More like poor directions on my part (this was one of my earlier recipes). Add the kielbasa back in once the potatoes are cooked. Edited the directions to make it clearer.

  9. I have made this for years but add chopped bell pepper and corn. Its quick, easy and a favorite of ours.

    Ive been cooking this for years, only with hotdogs, not kielbasi…kids liked hotdogs better…also, leave out the Oregano for this dish, if anything, use parsley instead.
