I do my eggplant cutlets by just spraying them generously on each side with cooking spray. It should work fine with this as well. I keep meaning to pick up one of those oil misters for things like this, but haven’t gotten around to it yet. That would be ideal.

Made these for my fam. Got great reviews!! Hoping not to purchase frozen ones again! Simple, easy to do, not super fond of frying, but will “play with recipe” to adjust to try and bake them. thanks for posting the recipe!!

A great dipping sauce is sour cream, brown sugar, and cinnamon mixed. Its oh so yummy!

I love the idea of keeping the noodles on the side. Mushy noodles are not appealing.

These only get crunch from the cornmeal. Oven fries ( http://blommi.com/baking-fries-in-the-oven/) are crispy though

These look quite yummy. What is the texture like? Do they have a crunchy or crispiness? That is my Achilles heel when it comes to french fries; I just love how crispy they are. I would love it if I could find a more nutrient rich vegetable to get that crispy, especially with less oil.
