This quick and easy dessert is perfect for entertaining, especially in the summer. It is not only nice and cool, but it also packs a caffeine kick… sort of coffee & dessert in one. There is also no cooking involved so you won’t heat your kitchen up. International Delight Iced Coffee makes it so simple to add coffee bar taste to your homemade concoctions… and it tastes pretty good as iced coffee too.

- 2 cups of International Delight Iced Coffee
- 1 package instant vanilla pudding
- 5 graham crackers (1 reserved for decoration)
- whipped light cream
- Make the pudding according to directions substituting International Delight Iced Coffee in place of milk. Chill the pudding.
- Assemble the parfait in cocktail glass.
- Crumble ¼ of a graham cracker onto the bottom of each glass.
- Top with a few spoons of pudding and rest of crackers (except reserved one).
- Add a layer of whipped cream and top with remaining pudding.
- If not serving immediately, place in refrigerator.
- When ready to serve, top with generous quantity of whipped cream, and pop a quarter graham cracker in edge.
