There is nothing like an ice pop on a hot summer day. This Coconut Lime Ice Pops Recipe is incredibly easy to make, with just two ingredients, and has just a meager 22 calories and 5 grams of carbs. I wanted something refreshing and mildly sweet, with just a bit of tang, and that is exactly what I ended out with. This ice pops recipe is not for your sweet tooth moments, the sweetness is subtle. These Coconut Lime Ice Pops are just the thing when relaxing from the heat, or for a little refreshment after a workout.
I thought these would be “mommy’s pops”, but although Lil’ Foodie doesn’t care much for straight coconut water freeze pops, she likes these coconut-lime ones quite well. I just can’t win.
