Cheesy Zucchini Dreamboats Recipe

Ingredients
  • 1 box of Low Sodium Chicken stuffing mix
  • 4 small zucchini squash
  • 1/2 cup of Garden Vegetable or Herbed cream cheese
  • 1/4 cup of butter
  • 1/3 cup of shredded cheddar
Instructions
  1. Preheat oven to 400 degrees.
  2. Microwave 1 1/2 cups water, cream cheese, and butter (or spread) in a microwave safe bowl for 2 minutes on high.
  3. Fold in the dry stuffing.
  4. Slice zucchini in half, and cut out a groove in each half.
  5. Heap the stuffing on the squash, gently pressing it to shape.
  6. Coat a baking dish with a little olive oil or non-stick spray. Place the stuffed zucchini in, and bake for 30-35 minutes.
  7. minutes before they are done, top with cheddar.
  8. Serve & enjoy
