The tart sweetness and vibrant color of the Berry Veggie drew me to it.  You would never guess this juice is packed with vegetables.  I knew I wanted to use it in the recipe for this post, but the juice was so tasty on it’s own that I didn’t want to make something that would mask the pure taste of the juice.  I thought about ice cream, but sherbet seemed a better fit.  That way the taste and beautiful color of the juice could really shine though.  I dragged my ice cream machine up from the basement and set about making a mix to put in it.  The process was far simpler than I expected.  I simply added mascarpone and maple syrup to the juice, adjusted the quantities a little, and it was ready for the chilly churning process.  It didn’t take much of either, since the mascarpone is so rich and the juice was already naturally sweet so the maple only needed to enhance that a little.

The results are tangy, with a solid creamy undertone, and mildly sweet.  I enjoyed it a lot.

Ingredients
  • 1 bottle Berry Veggie
  • 4 oz. mascarpone cheese
  • 2 tbs. pure maple syrup
Instructions
  1. Beat the ingredients together in stand mixer or use hand blender.
  2. Pour into ice cream maker and follow manufacturer's instructions.
Notes
*time is based on my unit, which has a built in compressor, so it may be faster.

    We really love the naked juices and I haven’t seen these new ones out yet, they sound really good. That sherbet looks perfect for summer, and that color – WOW!

    Whoo – that makes for one eye-catching dessert! I don’t even know what Mascarpone is but it’s a great idea to use those juices as a yummy but healthy base!
