Grilling season is now in full swing, and I couldn’t be happier. There is nothing like relaxing outside, while my daughter plays and dinner is on the grill. It is one of my favorite things about summer, and this year I am better prepared than ever.
We have a regular full size gas grill. It is perfect for putting together a quick meal and not heating up the house. Food grills nicely on it, but it is sort of the “fast food” version of grilling. There is no romance to it, no wafts of smoke in the air and infused into the food, no primordial connection. Thus when I have the time to wait for coals to come to temperature, I prefer the experience and flavor of grilling over charcoal. Having a grill option that is portable is also a plus. Although, my daughter and I are home a great deal due to her therapy schedule, it is nice to be able to bring a grill along for outdoor activities, and since she is getting a little older (just turned 5) more activity options will be possible in this and coming years.
Due to my adoration of grilling over coals, and a preference for something portable, she and I visited Kmart a few days ago, to pick up a portable charcoal grill. I had already checked out their Outdoor catalog, and found a few that interested me.We picked up a portable charcoal grill, coals, some food & condiments and a few odds n’ ends that day. I also browsed the solar lighting while we were there, and Kmart seems to have the best selection in this, versus other major retailers. Sitting outside the other night made me realize that I definitely need more lighting in our gazebo. This week Kmart has string lighting BOGO half off. The next morning, when I started assembling the grill, I ran into a problem due to a manufacturer defect. I returned the grill to Kmart a day later, and found the he customer service desk to be quite helpful. They thanked me for pointing out the defect, and ensured me that the item would not be returned to stock. The process was quick and the service was good. I decided to purchase a Weber Smokey Joe Silver Charcoal Grill this time, and couldn’t be happier with it. It’s portable, well constructed & made in the USA, a great buy, for just $34.99. Since I picked up a couple other items while there, my total was over $50, and I am a Rewards member, I not only got points for making the purchase, but also received a $5 gift card.
That evening, I found putting the Weber portable charcoal grill together to be a snap & promptly fired that baby up!When I bought Kingsford charcoal briquets, I got free bottle of KC Masterpiece barbeque sauce (there were coupons for this deal right in store), so I made BBQ chicken tenders for our dinner that evening. I am fussy, but my daughter is even worse than me, I knew she would eat these. While the grill was coming up to temperature, the tenders were simply marinated in Seven Seas Italian (just $1 at Kmart). My daughter and I hung out in the gazebo together, basking in the delightfully primal scent of smokey chicken wafting through air . She loves being outdoors, and enjoyed a cup of Juicy Juice and noshed on an apple (appetizer…lol), while mom had a Chardonnay. It was a special moment and a nice way to end her birthday. When the chicken was nearly done cooking I basted it with the BBQ sauce, and left if for a few more minutes. After pulling the tenders off, I dropped a 1/4 pound of large in shell shrimp onto the grill, no seasoning, just headed and de-veined. They were flipped after about a minute, and taken off after about a minute more. Shrimp cook quickly, even in the shell. This method especially brings out the salty ocean flavor of the shrimp, and the smoke from the coals adds more depth of flavor. By the time dinner was done, it was after dark. Lighting was not sufficient in the gazebo to eat there, so we went inside. My daughter gobbled up several chicken tenders. She generally doesn’t eat much meat. I guess she likes the smokey flavor from the charcoal grilling, as much as I do. The shrimp were peeled and simply dressed with a generous squeeze of lemon. I enjoyed them and did manage to get her to try one, but not surprisingly, they were not her cup of tea. Bedtime was quickly approaching. After dinner, I cleaned her up, and we looked at some books together in her new room, before my little birthday girl went to sleep.
